Staff at The Ring sat down with 2020 Platinum Award winner, Ericka Zuana of Little Mushroom Catering to find out everything an engaged couple would need to know about their catering services.
Little Mushroom Catering; then and now
Beginning as a 1 woman show in a tiny kitchen in Waterloo in 2010 Little Mushroom Catering grew organically through networking, both in-person and online, as well as word of mouth referrals. Always keeping sustainability & inclusivity at the forefront of the company’s decisions, owner Stephanie Soulis brought to the table ingredients and products from local farmers and suppliers. While also bringing onto her staff diverse individuals from our community.
Now, more than 10 years later, Little Mushroom has done more than their fair share of wedding and event catering – often more than 70 weddings in a year, and over 700 events total, annually. They continue to embrace and find love in their client’s stories, memories, and reasons for celebration.
“I love getting the opportunity to work with different people and bringing their visions to life. It’s not always easy, but the feeling is priceless knowing you helped create memories that a couple will remember for a lifetime,” Ericka shared with us when asked what the best part of her job was.
Michaela & Adam hired Little Mushroom Catering for their September, 19th, 2020 wedding. “Wow! What can I say! There are no words that could describe the amazing service provided by Little Mushroom Catering. Ericka was an absolute dream to work with and I genuinely feel like I left my wedding with a new friend. She was caring, kind and no task was too big or too small for her. All night, I had all of my guests raving about the food. There were both vegan and GF options and I heard from multiple people that the Vegan and GF food is the best they have ever had. I would use LMC anytime I needed an event catered. They were also more than caterers, they assisted with set up, coordinating, and just making my dream wedding possible. I am so happy my husband and I used Little Mushroom Catering and I hope we are given the chance to work with Ericka and Stephanie and the whole LMC team in the future.”

Little Mushroom Catering has two WPIC certified wedding coordinators, Ericka Zuana & Elizabeth Allan, who have coordinated and assisted with over 500 weddings. As Lead Wedding Coordinator, Ericka’s main role is to guide couples through their planning process and help them make educated choices. When these two women are on site for events, their main job is to direct the staff and their goal is to keep things running smoothly. They are also available to book for Full, month-of, or day-of Coordination packages so no matter how much help you are looking for, Little Mushroom has you covered. When booking a coordination package, Ericka or Elizabeth can assist couples during the planning process, by visiting venues, meeting with and choosing the right vendors, timelines, floorplans, menus, hall set up and tear down, food and beverage services, minor décor, guest experience and everything in between.
Stephanie is the owner and founder of Little Mushroom Catering. She has been involved in the food and beverage industry for twenty-four years. Stephanie takes care of the business development needs and leadership responsibilities of a continually growing business. She is most often found giving of her time and talents on local Boards, such as the KPL and Explore Waterloo Region.
Rachel Medeiros is the head catering chef and is responsible for the mass menu design, as well as any custom menu requests from our couples. She ensures that the execution of these menu items are flawless and delicious. Incorporating our in-house made dressings, sauces, jams, chutneys, and pickled vegetables are one way that Chef Rachel helps to raise the bar in the food industry. Paying great attention to details regarding allergies and dietary concerns is a strong suit that this Chef possesses and brings with her to every event.
Katie Ferguson is the Purchasing Manager, who ensures that the ingredients brought in and used are locally sourced as much as possible and of the highest quality. This has led to Little Mushroom Catering being the first catering company in Waterloo Region to have obtained their Feast On Certification. They are also in the process of obtaining their LEAF certification.
Little Mushroom Catering’s Services…
Little Mushroom Catering is all about offering customization to clients with a focus on attention to details.
“We offer the option for full-service event catering for both personal and corporate functions as small as 10 people and up to 1500 people, in venues and on private residences,” says Ericka. “Most of our clients are interested in unique and interactive dining experiences where the guests are well taken care of. Many of our clients are also environmental enthusiasts and care about where their food is coming from and how it’s prepared.”
“We now have a perfect, intimate space for pre-wedding showers, rehearsal dinners or day-after wedding brunches, in our Little Mushroom Dining Lounge,” Elizabeth tells us, “this is a new feature that we can offer our couples who want to get a group of 10 or less together. We also offer the space for Elopement ceremonies, which includes live music, an officiant, food, and bar service packages. Come dressed and ready to say “I do!” with your photographer in tow and everything else is ready for you here”.
For weddings, Ericka admits that Little Mushroom is unlike most catering companies because they don’t rely on “packages” for clients to choose from: “Instead, we can individually price and customize items for you so that your wedding truly reflects you as a couple,” she says. “On our website, you can find the Wedding Intake Form to communicate to us the basic information regarding your wedding, plus your specific wants and needs. It’s about us listening to you and bringing your dream to reality, and not about us simply giving you option A, B, or C.” Ericka loves to create tailored proposals to fit each client’s vision.
“The most popular thing we’ve seen in the last 2 years is fusion menus & incorporating personalized plates into the menu. With more restrictions on the styles of dining, couples are looking to make their plated meals more interesting than your traditional chicken or beef option,” Elizabeth says. “Weddings now are also smaller guest numbers, so there can be more of the budget allocated to the food being out-of-this-world and totally original. Again, couples are looking to bring together their 2 cultures or different upbringings. We’ve done Newfie – German, Mexican – East Indian, Polish – Mexican, as well as taking things like the couple’s favourite salad combination or Grandma’s butter tart recipe and including those in their wedding meal.”
Little Mushroom also offers edible wedding favours called Nom Nom Treats, which are customizable labeled cookies that are addictively delicious and individually packaged. Available in classic sugar cookies or chocolate!
For takeaway desserts, they have mini donuts, cupcakes, and assorted dessert boxes. The plated desserts, such as tiramisu, black forest mousse cups, or even a traditional multi-tiered wedding cake are what Ericka describes as a great way for couples to help keep wedding traditions alive.
Ashley believes that Little Mushroom Catering prices were very reasonable for the services they received. “Our guests raved about all aspects: the meal and bar service and I think that the cost for that was worth it. The estimate that they gave us was exactly what the bill was in the end, there were no hidden fees or costs,” she says. “Compared to other caterers that we spoke to, Little Mushroom was on par as far as value, but we felt that their quality was above average.”
Melissa admits that when they were looking for their caterer, they shopped around. “We priced out about six different companies from the KW area and Little Mushroom was very comparable if not a little bit more expensive than the rest. Now having said this, when you compare prices that’s all you are doing, you are not comparing food quality, service level, personality, ability to pull off anything you request,” she says. “So if we talk dollars alone, they might be a bit higher but after comparing their food with other companies at the few tastings we did, there is no comparison. Little Mushroom blew them all out of the water! Choosing Little Mushroom was the easiest decision we made.”
